Baba Ganoush


  • 1 Aubergine
  • Juice of 2 limes
  • 3 Tablespoons of Tahini
  • 2 Cloves of Garlic
  • Salt
  • Parsley


  1. Roast the aubergine under a grill, turning it a few times, until the skin is blackened.
  2. Scoop out the aubergine flesh with a tablespoon and put in a blender or food processor along with the lime juice, tahini, garlic, salt to taste and two tablespoons of water. Puree until smooth.
  3. Serve in an appropriate dish and garnish with parsley. Enjoy!
