- 1 Aubergine
- Juice of 2 limes
- 3 Tablespoons of Tahini
- 2 Cloves of Garlic
- Roast the aubergine under a grill, turning it a few times, until the skin is blackened.
- Scoop out the aubergine flesh with a tablespoon and put in a blender or food processor along with the lime juice, tahini, garlic, salt to taste and two tablespoons of water. Puree until smooth.
- Serve in an appropriate dish and garnish with parsley. Enjoy!
